It is obtained from the use of semolina (very rich in gluten) regrinded varieties of durum wheat grown in the territories of the municipalities of the Murgia. After years, the Bread of Altamura bears the trademark &#8220;DOP&#8221;. The &#8220;Bread of Altamura&#8221; has been recognized as a healthy and balanced food with unique nutritional characteristics, as it derives from the selection of excellent durum wheat, obtained in an environment with specific geo-climatic factors, from which the territory of the northern Murgia is characterized and the use of drinking water normally used in the area and the use of only mother yeast.<\/p>\n<p>Altamura bread is a bakery product made from duroo wheat semolina, obtained from the grinding of durum wheat of the &#8220;Appulo&#8221;, &#8220;Arcangelo&#8221;, &#8220;Duilio&#8221;, and &#8220;Simeto&#8221; varieties produced in the geographical area defined in the product specification of the Consortium for the Protection of Altamuranella bread in the geographical area defined in the production disciplinary which includes the territories of the Municipalities of Altamura, Gravina in Puglia, Poggiorsini, Spinazzola and Minervino Murge in the Province of Bari. The Bread of Altamura, with its characteristic fragrance, of never less than 0.5 kg in weight, it was the first product in Europe to bear the DOP mark in the \u201cBakery and bakery products\u201d product category.<\/p>\n<p>The bread of Altamura PDO must meet the following characteristics<\/p>\n<p>loaf in pieces no less than 0.5 kg in the traditional acccavallata shape (locally called skuan\u00e8te) with kissing on the sides, or low (locally called cappid d\u2019pr\u00e8vte) without kissing;<\/p>\n<ol>\n<li>b) crust thickness of at least 3 mm;<\/li>\n<li>c) straw-colored crumb characterized by a homogeneous honeycomb;<\/li>\n<li>d) characteristic aroma;<\/li>\n<li>e) humidity not exceeding 33%.<\/li>\n<\/ol>\n<p>The finished product will be packaged in microperforated thermodetrable material with a label showing:<\/p>\n<p>1) list of ingredients, production company;<\/p>\n<p>2) expiration date;<\/p>\n<p>3) logo<\/p>\n<p>4) alternatively, without any casing, with the sole affixing on the finished product of a label in biological material showing the characteristics listed above and the wording &#8220;bread of Altamura DOP&#8221;<\/p>\n<p>Labels must appear on the labels to be used inseparably with the protected designation of origin. The graphic symbol is composed of &#8220;Samnite shield surmounted by a four-quarter crown, two-red crowns and two reds&#8221;.
